While I love this meal, I need to shake it up a bit.

Also, statistics wise I could up the protein a bit and kill a little fat.

Any suggestions?

Try substituting quinoa for the rice – it’s a good source of protein. As a chicken ‘substitute’, I would suggest turkey breast or tofu – also both high in protein (although the fat content of tofu is higher than chicken or turkey). As for broccoli, I like my green vegetables, and am currently passionate about leeks (!), but I also like Brussels sprouts, beans, asparagus, spinach……Mushrooms would also fit well into this mix, and there are so many varieties out there! I also use herbs and spices to give a different taste to things – I found a Tex-Mix mix which I add to a leek and mushroom stir-fry for a bit of excitement ;-)

Tons, thank you :)

I love messing around with spices and have learned I prefer to cook with the raw stuff than the dried.

Turkey breasts are a good idea, but no matter how hard I try I cannot get into tofu. :(

Leeks and brussels sprouts are both things I’ve been wanting to try and haven’t, so I will now thanks :)

I think the biggest thing for me overall is texture… and rice can definitely be overdone for me. Quinoa I feel will become the same but I’ll just keep subbing.

Instead of chicken, try turkey, guinea fowl, pheasant, quail, poussin.

Instead of brown rice, try quinoa, millet, lentils, cous cous.

Instead of broccoli, try cauliflower, swede, parsnips, fennel, squash.

Lots to choose from.

Postscript: shrimps, mixed seafood (I buy both of these frozen), ostrich and rabbit all have a high protein content for relatively few calories. AND they taste good!

you could also swap a bean for the rice.

i’m vegetarian so i do quorn cutlets (basically like chicken cutlet with lima beans and salsa

egg + black bean + mushroom + squash
