Lemon Pepper Chicken

Ok, I cook this all the time. It is Healthy and Tasty!

 

Grab a pack of Boneless Skinless Chicken breast.

2 Large Lemons

Lemon Pepper Seasoning

 

Pre-Heat your oven at 350 Degrees

Clean the chicken breasts and cut as much of the fat off as possible.

Place chicken in a baking pan.

Juice both lemons and strain out the pulp.

Pour Lemon Juice in baking pan, and lightly season the breasts with the Lemon Pepper seasononing.

Bake in oven for 45 minutes to an hour.

 

I like to make sure I have put lemon juice over all the chicken, With the large lemons you should have juice about a quarter of an inch deep in the pan, maybe deeper depending on your pan size.

When this is done cooking most of the lemon juice should be gone.

 

Proper serving size of chicking is about the size of a deck of cards. Most packages of chicken come with 4 breasts, so you can easisly have a weeks worth of dinner if you are only cooking for you.

I also like to compliment the chicken with Mac and cheese or for healthier out come some rice.

Supreme Tortilla Pizza

Calories: Approximately 335-385


Ingredients:
- Wheat Tortilla
- 1/4 cup Tomato Sauce
- 1/4 cup Fat Free Skim Mozzarella Cheese
- 17 slices Turkey Pepperoni
- 2 Tbsp Shredded Parmesan Chees
- 1/2 of a small Red Onion (chopped)
- 1/3 of a large Green Pepper (chopped)
- 2 or 3 Mushrooms (sliced)

Preheat the oven to 350?F. Place the wheat tortilla on a baking sheet and spread the tomato sauce evenly over the tortilla leaving a half inch border for the illusion of a crust. Next, layer on the pepperoni and sprinkle on the cheeses. Then, top the pizza with veggies. Finally, place the pizza in the oven and cook for 20-25 minutes.

Note:
I suggest placing the turkey pepperoni directly on the sauce to keep the slices from drying out and then putting the two cheeses over the top. However baking is all about experimenting, so do what works best for you. :)
