I am trying to find different high protein / low fat foods that don't require refrigeration (I am getting a little sick of eating beef jerky all the time). I would appreciate any suggestions.

High protein snacks

I turn to hard boiled eggs, string cheese, and cottage cheese. I'm going to think about stuff that doesn't need refrigeration-usually I'll throw a string cheese in my purse cause it is fine for a few hours.

Boiled eggs are awesome.  They can last without refrigeration for a few hours too if need be, and if one isn't enough, taking off and eating just the egg white of another is easy too.  And they're CHEAP!

Nuts!

Nuts are a great choice, although in moderation as they're pretty high fat. My vague recollection is that cashews are particularly good on the fat to protein ratio, but you might want to double check that. Of course there are the ubiquitous protein bars, but they're pricy and either full of carbs or sugar alcohols (which I dislike).

How much unrefrigerated time are we talking about here? A hard boiled egg or string cheese is fine for a few hours. If this is for work, you might want to invest in one of those little insulated lunch boxes, which would widen your options a whole lot.

Have you tried salmon jerky? I think it's delicious, and a pretty different flavor so it might help with the boredom.

Do you like edamame?

A half-cup of shelled edamame has 11 grams of protein, and they're yummy, too!

I love edamame! but I can't find them anywhere in Australia (except restaurants). Have tried supermarkets and specialty asian grocers... any other ideas?

I've heard (from my GP, but I can't find further evidence of this) that certain nuts are better than others in terms of omega-3 and good/bad fat levels. Apparently walnuts and almonds are particularly good.
