Subject Description
What are your favorite healthy meals?
I made one up out of the blue this evening that I'm going to add to my regular list. For one serving, I used:
1 0.63 lb lamb steak (278 g)
1/3 c yogurt
1/2 seedless cucumber
1/2 small red onion
1 whole wheat pocket pita
1 cup spring mix
kosher salt and pepper to taste
Coarsely chop the red onion and about half of the cucumber portion, and mix with the yogurt; allow to stand long enough for flavors to blend (took me about fifteen minutes at room temperature, but it was a strong onion).
Preheat the broiler and season the lamb steak with salt and pepper. Broil the steak on each side for about five minutes or until done. Allow to stand for a few minutes after cooking.
Thinly slice the remaining cucumber portion. Arrange on plate with the steak, spring mix (or lettuce of your choice) and warm pita. Top with yogurt mixture and dig in!
