Adding fruit

I am not much of a fruit eater so I have been looking for ways of adding fruit to my dinners. This one is Great. I serve with seafood

Cranberry, Jalapeno Salsa

1/2 cup Cranberries, minced fine

1 jalapeno, seeded and minced fine

1 mandarin orange, peeled and chopped

1 tblsp olive oil

1 tblsp honey

1/4 tsp cinnamon

mix all together and refrig for one hour

Extremely tasty on my baked fish fillets.

Good work, setfire!

I just want to complement setfire on the Potato Stuffer recipe. I used it last night and it is great! I can't believe you can get that much flavor with so few calories. I used to put that same amount of calories into a baked potato with just the butter alone. Thanks for sharing!

Simple Stir Fry

Hello all! I cannot tell you how psyched (and relieved) I was to find a "Foodies" group on Gyminee. Thank god you are here! ;0 Anyway, I wanted to share with you a really simple and low-cal stir fry that I concocted last night while trying to fend off a ferocious craving for Chinese takeout. Here goes:

Simple Stir Fry

Ingredients:

3 chicken breasts

1 can chopped water chestnuts

1 can whole button mushrooms

1 can sliced bamboo shoots

1/2 an onion, cut into slivers

2 TB stir fry sauce

1 tsp wok oil

1 TB BBQ sauce

1 oz chopped peanuts

3 tsp chopped green onion

Cook and cube about three chicken breasts. (I used a George Forman grill). In a wok or frying pan, sautee slivered onion in about 1 tsp. wok oil, add 1 can each chopped water chestnuts, whole buttom mushrooms and bamboo shoots (rinse with water first to get sodium and preservatives out). Add in chicken and toss with about 2 tbs. stir fry sauce and one tb. of your favorite BBQ sauce. Top with one small handful of chopped peanuts and a handful of chopped green onion. Optional: serve over rice or noodles. Makes about three one-cup servings. Without rice or noodles, one cup is just under 400 cals.

good website for baked-goods recipes

My mom made these muffins over Thanksgiving weekend, and they were great. Whole wheat pumpkin muffins. You can get the recipe at www.hodgsonmill.com.

She also substituted half the oil with milled flax seed, also from Hodgson Mills.

Salmon Salad

I entered a new recipe that is a "go to" meal at our house.

Salmon Salad

It's very easy and takes only 15 min of prep and 30 min inactive prep.

It's a good hot summer dish.

We usually serve it over a bed of greens.

Let us know if you give it a try.

cookinglight.com Enchiladas

Taking Mark's suggestion, I found a recipe I want to try from Cooking Light.

Swiss Enchiladas Food Item

Original Recipe Link

Just for fun I thought I would try adding this as a "Recipe". I attempted to use as many ASDA food items as I could. Unfortunately the recipe food search is a limited version of the main search. It doesn't allow you to use any of the filters or sort items. At this time I don't really see the benefit to adding food as a recipe if you know the nutritional information.

In the end Gyminees calculations were only slightly higher than Cooking Light's. 2 grams higher on fat and about 50 cals higher. Not bad.

I'll let you know about the enchiladas once I give them a try.

Note: Message has been edited by group admin.
