About Me
My highest weight right before I found this website was 306 lbs. I realized I was sick and tired of being sick and tired. Its time for a change! I love life and love the Lord and with his help I will be able to give it my all and all! I work in Occupational Therapy with children, mainly children with Autism and other mental disabilities and major physical disabilites. I just love my job but my size and endurance often effects my ability to perform many ativites I would like to do with the children. I now have grandchildren being born and I want to be able to play and run with them as they grow up as well. I have a active fun mind that is trapped in a very obese and tired body. I know it is time to make a life change...not just diet and walk hee and there, I have done that for the past 20 years and I have only gotten bigger. Ready..Set...GO!!!

Vegetarian and Protein
It's interesting that you asked about how I get my protein. That's probably the #1 question a vegetarian gets asked. So, first let me say this... I'm a vegetarian, but not a vegan. This simply means that I don't do meats, but do animal by products such as eggs and cheese. To put it in the most basic of terms, if the animal didn't have to die for it to be on my plate, then it's okay...lol! I have been raised this way since birth (religious belief of my parents) and it's really true that you don't miss what you've never had. But, obviously vegetarian doesn't automatically mean thin and healthy. After all, I became severely overweight as a vegetarian. There are many "meat substitute" products on the market, but just as with meats, you have to make sure you are eating the lean sources of protein as some of these are high in fat and as bad as some of your meat products. There are a few companies/brands that I tend to favor...Worthington/Loma Linda and Light Life's Smart Deli line of deli meats. These are soy protein based products and many of them are considered very lean proteins. Also, look into the Morningstar and Boca line of burgers, chicken patties, and meal starters like chicken strips and such... Many of my friends say that these are very good and pass the look and texture test of the real thing and that the taste is pretty good to them too. Do I think you need to go vegetarian to see weight loss on the scale...no. There are several choices of lean and very lean protein on both sides of the meat vs. vegetarian diets that I don't really think it matters. The one benefit to the vegetarian lifestyle is that you don't have to worry about things like Mad Cow ... lol!!! Sorry for the long post, btw, but hopefully this will give you a jumping off point for vegetarian protein research.

bad day, very bad day ive been in a all day workshop and out of town, worked out sooo hard this morning very early and really blew it, I Really messed up by not packing my food and alos by not driving my own car. I have to really hit it hard tomorrow!

Enchilada Recipe
I'm glad to hear that you liked the Spinach Chicken Enchiladas. You may have noticed that I have 2 versions of the recipe, one of them vegetarian. I had it yesterday, and if I do say so myself, it rocked. I wasn't sure about the meat chicken one though, because I'm a vegetarian and have no idea what I'm doing when it comes to meat. But, I had a friend challenge me to plan her meals for a day b/c she couldn't believe the quantity of food I am able to eat in a day and keep my calorie count so low. So, I've planned her meals for tomorrow and hopefully she'll enjoy the enchiladas as much as you did.
