Food Description
Taken from the Modena region of Italy. This is a simple but classic soup. Roasting the tomatoes is the key to getting the sweetness from the tomatoes, combine this with some garlic, herbs and then the balsamic vinegar to cut through the richness. This is a soup where less is more, we have left the soup deliberately lumpy, letting the roasted tomatoes melt into the soup. For this reason you may find the occasional tomato stem.
