- 4 servings of Multigrain Flatbread with Flax Seed
- 4 servings of Tomatoes, red, ripe, raw, year round average (1 medium whole (2-3/5" dia))
- 2 servings of Mushrooms
- 1 serving of raw, medium red onion
- 7 servings of Fat Free Mozzarella Cheese
- 1 serving of DAB Scallion Onions
- 6 servings of Mrs Dash Tomato Basil Garlic
- 4 servings of Fat-free cottage cheese
- 3 servings of Steamer Chopped Spinach
- 5 servings of Tomato Paste
- 3 servings of Minced Garlic
- 2 servings of Onions, spring or scallions (includes tops and bulb), raw (1 large)
Recipe Description
Italian Spinach Casserole
Ingredients
4 Multigrain Flatout Wraps
3-4 Large Tomatoes
1 Cup Sliced or Diced Mushrooms
1 Onion Thinly Sliced
1 Box Chopped Spinach-Drained
1 Pkg Fat Free Mozzarella Cheese
2 Cup Fat Free Cottage Cheese
1 Can Tomato Paste
3-4 Scallions
Minced Garlic
Italian Herb Seasoning to Taste
Preparation
· Pre-Heat oven to 350o.
· Thinly slice all tomatoes and onion
· Dice scallions
· Thinly slice or dice mushrooms
· Prepare Cheese Layer
o Thaw and drain spinach
o Mix Cottage Cheese, Tomato Paste, and Drained Spinach.
o Season with Minced Garlic and Mrs. Dash Tomato Basil Garlic Seasoning to desired taste.
Assembly
· Line bottom of 2 square baking pans with a multigrain flatout.
· Layer ½ of cottage cheese and tomato paste mixture between the 2 pans.
· Add a layer of sliced tomatoes, onions, and mushrooms.
· Sprinkle with Mozzarella Cheese
· Lay a 2nd flatout in baking pan and repeat the layering process with remaining ingredients.
· Garnish with diced green onions.
· Bake in a 350o oven for 30-45 minutes until center is hot.
· Portion and Serve.
