Recipe Description

Vegetarian italian skillet.  May use zuchinni or summer squash.  Season to taste.

  1. Halve squash, then cut into 1/4 inch slices.
  2. Cut (cherry or grape) tomatoes in half.
  3. Dice green onions.
  4. Sautee garlic in large skillet coated lightly with non-stick spray.
  5. Add squash/zuchinni and sautee over medium high heat for 5 minutes.
  6. Add green onion and sautee for 2 minutes.
  7. Add tomatoes, cheese, italian seasoning, and pepper.  Sautee to desired firmness.
