List of Ingredients
- 3 servings of Minced Garlic
- 4 servings of Squash, summer, zucchini, includes skin, raw (1 cup, sliced)
- 4 servings of Green Onion, 1 Stalk (2 tablespoons)
- 5 servings of Tomatoes, Grape
- 2 servings of Cheese, parmesan, grated (1 tbsp)
- 2 servings of Italian Seasoning (1 tspn)
Recipe Description
Vegetarian italian skillet. May use zuchinni or summer squash. Season to taste.
- Halve squash, then cut into 1/4 inch slices.
- Cut (cherry or grape) tomatoes in half.
- Dice green onions.
- Sautee garlic in large skillet coated lightly with non-stick spray.
- Add squash/zuchinni and sautee over medium high heat for 5 minutes.
- Add green onion and sautee for 2 minutes.
- Add tomatoes, cheese, italian seasoning, and pepper. Sautee to desired firmness.
