Recipe Description

 

  • 2 lb ground turkey
  • 1 medium onion, chopped
  • 2 cans (16 oz) kidney beans, rinsed and drained
  • 2 cans (15 oz) pinto beans, rinsed and drained
  • 2 cans (15 oz) black beans, rinsed and drained
  • 2 cans (11 oz) shoepeg corn
  • 1 can (10 oz) diced tomatoes & green chilis
  • 1 can (14.5 oz) diced tomatoes
  • 1 jalapeño pepper
  • 1 can (11.5 oz) V8 juice
  • 2 envelopes ranch salad dressing mix

 

Taco Seasoning

 

  • 2 tablespoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon dried oregano
  • 1 teaspoon paprika
  • 3 teaspoons ground cumin
  • 1.5 teaspoon kosher salt
  • 1.5 teaspoon black pepper

In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain.

Transfer to 5 qt slow cooker. Stir in beans, corn, tomatoes, juice, pepper, and seasonings.
