Recipe Description

  • 6 large potatoes, peeled and cubed.
  • 2, 8oz packages 1/3rd less fat cream cheese, cubed.
  • 4 cups chicken broth.
  • 1 cup chopped onion.
  • 1/2 cup chopped celery.
  • 1/2 cup chopped carrots.
  • 1 tbsp minced garlic.
  • 1 tsp kosher salt.

Combine all ingredients in slow cooker and set to low for 8 hours.  You may need to stir a few times to ensure the cream cheese gets incorporated fully.
