Recipe Description

Amazing veggie burgers = )

 

Cube eggplant, and sweat it in a colander with some salt.  Rinse well, and place on a baking sheet with sliced onions.  Add lawry salt and pepper, sprinkle with olive oil, and roast for 25 minutes.  

 

Mash the bean mixture until it is almost smooth with just a few chunks left.  Add flour and breadcrumbs.  

 

In a bowl beat eggs, walnuts, and cheese. Blend this mixture in with the veggies and beans.  form patties, coat with breadcrumb and pan fry with 1/2 and 1/2 butter and olive oil.  

 

This batch makes 7 patties, and they freeze well.
